Indian lentil soup

If you like a little spice in your life, you will love this easy lentil soup recipe.

Place the ingredients in your slow cooker in the morning, throw in some spinach and coconut milk when you get home from work and there you have it!

I'm always looking for ways to add leafy greens to our family meals. This soup easily welcomes spinach but I have used kale, swiss chard and beet greens.

Ingredients

1 1/2 cups red lentils 7 cups of vegetable, chicken broth or water 1 medium onion, diced 1 - inch piece fresh ginger, peeled and minced 1 jalapeño pepper, diced 1 tsp ground turmeric 2 tsp ground coriander 1 1/2 tsp ground cumin 2 cups diced sweet potato 1 cup chopped green beans 1 (14 - ounce) can coconut milk 2 cups chopped fresh spinach Chopped fresh cilantro, optional Salt and pepper to taste
